 All-Oregon Newsletter December 2005



Winter has definitely come to my part of Oregon.  The weather here is cold and wet.  They say we might get some snow, but I will believe it when I see it.  They are getting a lot of it in parts of Oregon right now.  I talked to friends in Bend and they have 11 inches with more on the way.  The coast is stormy so hotel rooms will be selling like hot cakes.  Many people here (myself included) watch the wind and the waves from a nice warm hotel room while sipping a toddy and keeping warm.

Speaking of the coast, be sure and watch for next months issue of All-Oregon when I bring back the guest article series.  We are going to start with an article about Port Orford.  “Small, friendly, quirky, with a relaxing energy in a naturally beautiful setting...Port Orford is filled with nice people, an unhurried atmosphere and no stop lights.”

2005 Christmas Festival of Lights at the Grotto
December 1-30, 2005 -- Welcoming over 50,000 visitors annually, this ecumenical lighting and music festival is quite possibly the largest Christmas choral festival of its kind in the world. The Festival features 140 holiday music concerts performed in The Grotto's 600-seat chapel with over 5,000 singers and musicians giving their gift of music during the annual celebration. ZooLights 2005 
December 1-31, 2005 -- The zoo comes alive as you walk through this winter wonderland of more than a half-million lights. Included in the winter festival is our lighted zoo train, choral and ensemble music, puppet shows, model train display and our fantastic gift shop. Holiday Ale Festival
December 2-4, 2005 -- The only beer festival in the Northwest to be held outdoors in the dark, cold and often wet month of December is both heated and tented. The Festival will celebrate the release of the region's craft-brewed winter ales. The beers featured at the event are produced by 29 of the region's premier craft brewers and are created specifically to bring warmth and cheer to the holiday season. Christmas Ships
December 8-20, 2005 -- This marks the 51st year for the Christmas Ship Parade on the Columbia and Willamette Rivers in Portland, Oregon. The Christmas Ship Fleet averages about 55 to 60 boats between the two Columbia and Willamette River fleets.  Both fleets will be out every night for two weeks. If you are interested in joining the Christmas Ship Fleet, please click here for information. Weather and/or water conditions are the only element that will cancel the ships performance. That determination is made by the leaders for the evening about a half hour before the ships are scheduled to begin performing.

Pittock Mansion

Once the private home of Henry Louis Pittock, founder of The Oregonian, this 22-room house was built in 1914. The mansion sits 1,000 feet above sea level and commands a view of five mountains in the Cascade Range. It is an outstanding architectural achievement, combining fine plasterwork, cut and polished marbles, cast bronze, and superbly crafted hardwoods and paneling. The house is completely furnished with antique furniture and objects d'art appropriate to its 17th, 18th, and 19th century French and English designs.

Salmon With Blackberry Hollandaise

Serves 4

For Hollandaise

  • 4 egg yolks
  • 2 Tbl. fresh lemon juice
  • 1 1/2 sticks sweet butter (12 oz.)
  • Dash salt, white pepper

For Blackberry Sauce

  • 2 cups blackberries
  • 1 tsp. Dijon mustard
  • 1/2 tsp. garlic, minced
  • 1/2 tsp. shallot, minced
  • 1 lemon, juiced
  • 3 Tbl. Madeira wine

For Salmon

  • 1 lemon, quartered
  • Fresh mint
  • 2 cups white wine
  • 3 cups fish stock
  • (4) 6 oz. Salmon fillets

Whisk egg yolks and lemon juice in top pan of double boiler. Place pan onto double boiler. (Water in bottom of double boiler should be simmering, and not touching top pan.)  Whisk continuously until sauce just begins to thicken. Remove from heat and slowly pour melted butter in steady stream, continuing to whisk until all butter is incorporated. Add salt and white pepper. Set aside.

In small saucepan, combine blackberries (reserving some for garnish), mustard, garlic, shallot, lemon juice and Madeira.  Reduce by one-fourth, stirring often to keep from scorching.  Puree in a food processor; pass through a fine sieve.  Set aside one quarter of the reduction for garnish.  Fold the remaining portion into the 4-egg hollandaise.

In a fresh saucepan, combine quartered lemon and one sprig of mint with white wine and fish stock. Bring to a boil, then reduce to simmer. Using a spatula,  carefully place the salmon fillets in saucepan, and poach for 8-10 minutes. Remove fillets with spatula so that they retain their shape.   Spoon some Blackberry Hollandaise into the center of each serving plate, then drizzle a thin circular line of reserved puree. Lightly draw the back of a spoon across it, making a scallop effect toward the outside of the plate. Place a salmon fillet in the circle and garnish with mint flowers or borage flowers and 3-5 whole blackberries.

What’s New at All-Oregon
Not a lot of new things happened at All-Oregon since the last newsletter.  My goal was to get the newsletter renewed and this is the second issue that is coming out in a timely fashion.  I do have plans to send this out every other week starting in 2006.  There are so many great things to share with you!  I want to several new sections such as the guest article, an outdoor recreation section, a shopping section and more.  Let me know if there is anything you would like to see in this newsletter and I'll see if I can add it.

Things are going well with the new companion Oregon-Classified site at  We actually have a few ads placed now and I know when people realize they can post for free, we will see even more (spread the word).
