All-Oregon Newsletter April 2005



Spring has definitely arrived here in the Willamette Valley.  It's either raining or the sun is shining and it switches between the two in a matter of minutes.  There is still snow coming off and on in the mountains and that is a good thing. 

You'll notice a change in the events section of All-Oregon this month.  Since I don't seem to be able to get this newsletter out by the first of the month so you will have great ideas for things to do all month, I've decided to put it out later in the month, but include the events for the upcoming month.  This issue will be a bit different because it will include April and May.

Last issue had a new feature guest article written by Joy Henkle about Rafting the Rogue.  So many of you wrote me that you could not get to the rest of the article from the email, that I am going to rerun it.  From now on I will always include the url address with any links for those of you who have email programs that weren't picking up the links.

Rhododendron Festival
May 20-22, 2005 -- Every year during the third weekend of May, Florence takes great pride in presenting this festival to thousands of visitors. An amusement carnival opens mid-week, and then the weekend kicks off on Friday with live music and dancing.  The festival includes 5 & 10k runs, floral displays, arts and crafts shows, the Kiwanis Kids Games, a junior parade, the Grand Floral Parade, and many other events. Silver Falls State Park --
Nestled in the lower elevation of Oregon's Cascade Mountains lies a temperate rain forest. It's here that the Trail of Ten Falls/Canyon Trail (770k) can be found. The Canyon Trail and the falls descend to a forest floor covered with ferns, mosses, and wildflowers. You will also find stands of Douglas fir, hemlock, and cedar. While the park is visited by thousands every year, it's large enough for you to find quiet places to sit and watch for birds.

Featured Oregon Recipe
Food shows on television are very popular and Oregon has it's own chefs with a cooking show.  Caprial and John's Kitchen is shown on OPB and American Public Television.  Caprial has written several cook books.  This recipe is from one of their shows.  You can learn more about them at

Braised Pork Shoulder
Serves 6

4 pounds pork shoulder, trimmed and large diced
1 tablespoon extra virgin olive oil
1 yellow onion, diced
3 cloves garlic, chopped
4 cups chicken stock
4 dried Ancho Chiles, dried and pulverized to a powder
2 cinnamon sticks
1 chipotle pepper in adobo sauce
Zest 1 orange
½ teaspoon orange oil
2 teaspoons dried oregano
Salt and black pepper

Pre-heat oven 350°

Heat a very large straight-sided sauté pan with olive oil until smoking hot. Season the pork with salt and black pepper. Add the meat and sear well about 5 minutes. Add the onion and sauté about 2 minutes. Add the garlic and quickly sauté about 1 minute. Add the chicken stock, ancho chile powder, cinnamon sticks, chipotle pepper, zest of orange, orange oil, and dried oregano. Bring to a boil. Cover with a lid and place in the oven. Braise until tender about 40-50 minutes. Remove from the oven and skim the fat off the top. Season with salt and pepper. Serve warm with rice or soft polenta.
